This is a family favourite as anyone can eat it.
I found with this recipe that although it uses either drumsticks or thighs that Chicken is easy to eat as it breaks up to quite small pieces.
3 tbsp Olive Oil
2 Onions, peeled and diced
4 Chicken Drumsticks, or thighs
175g Long-grain Rice
600ml Chicken Stock
1 can Carrots
1 Bay Leaf
1 can Mushrooms
Salt & Pepper
- Fry Onions.
- Add Chicken, and fry them until lightly brown on all sides.
- Add rice and cook for 1 min.
- Add stock, carrots, mushrooms, bay leaf and seasoning.
- Simmer for 35-40 minutes until chicken is tender.
